Sweet crepes

Soft or stuffed, rolled or served flat, round or square, crepes can be an aperitif or a dessert in all corners of the world. In Russia we find blinis, crêpes made with flour and yeast. Blinis became popular as women prepared them as a sign of good omen for a generous harvest and, over time spread in the higher echelon of society. In Hungary, Served for lunch or dinner,palacsinta is known to be an excellent sweet or savoury snack, suitable to be eaten both hot and cold. Pancakes are the North American version of the crepes. they are so well known that a dedicated day for them is a national holiday. Shrove Tuesday is that day, celebrated in North America as well as in The UK. In North Africa, we call them Mssemen, served as a sweet crepe with honey or we serve with a filling of sweet peppers, tomato and onions as a savoury alternative, called M'hadjeb.
